A Carrot a Day to Keep the Dermatologist Away!

An increasing number of studies are showing that a diet rich in carotenoids that are pro-Vitamin A (like Carrots) is associated with a reduced risk of Squamous Cell Carcinoma.  
There is increasing evidence that higher dietary intake of vitamin A-rich foods can decrease the risk of squamous cell carcinoma, especially for those individuals with lots of moles and who had lots of blistering sunburns in childhood and adolescence.  The mechanism of this protection is not clear but is likely related to the antioxidant effect of carotenoids.  The antioxidants combat the damage of free radicals and this is protective against cancer.
