Saving the Carbs for Last

Good news! Studies indicate we can incorporate some carbs and sugary eats into your diet, so long as we consume them in the right order.

Doctors at Weill Cornell Medical College in New York conducted a study, which showed a significant decrease in blood sugar levels if we eat vegetables and proteins before our carbs and sugary foods.

The proteins we eat slow down the release of sugar from carbs into the bloodstream and thus prevent a sugar high and then crash. The findings are particularly significant for diabetics, who must retain tight control over their blood sugar levels.

The findings also showed that people stayed fuller for longer when starting a meal with vegetables and proteins and then consuming carbs, as opposed to the same meal in the reverse order. “It’s possible what this is doing is delaying or tempering how fast the carbohydrates get absorbed,” said Dr. Sethu Reddy, chief of the Adult Diabetes Section at the Joslin Diabetes Center in Boston.

Currently the studies are only for blood sugar levels within 2 hours of eating, so it will be important to see what’s happening to the carbohydrates beyond that. But if the theory holds true, this will be significant for millions of Americans affected with diabetes and weight problems.
